Here is a question from a former Amsterdamian. If anyone knows anything about how Brownie’s used to make their meat sauce, please leave a comment here.
“I relocated to North Carolina 20 years ago, and for about just as long I have been trying to duplicate a hot dog meat sauce that used to be served at Brownie’s in Amsterdam. Can you post this question on one of the local bulletin boards up there?”

i have been looking for same thing. I’m from Gloversville and everytime I go home we run right to Dean’s on RT 30 for hotdogs w/meat sauce and can’t find anything even close to it. If ever you find it please send it on. Thanks.

I use to live in Canajoharie. Brownies was a mainstay for my friends and me. I remember eating five of Brownies hot dogs at one time. I to would like to know the recipe.

Hi all, I lived in G’ville, and Mayfield. Moved to SC in 1981. Everyone here uses a red chilli sauce. If anyone has a brown meat sauce please share it. New York Lunch in Gloversville is where I go when I visit. I like Deans too.

No more information here…just more memories. I was 5 years old the first time i sat at the counter and had one of Ray’s Mexican Hots and fries with gravy. Oh well, that was 25 years ago, and to this day have never found a suitable replacement. Sorry. The only thing I’ve found that is actually decent is the local Stewart’s in the Amsterdam area sell hot dogs and a “brown meat sauce” that is pretty good and pretty close. Now that I live in NH the intervals of getting to NY to eat “real food” get further and further apart. So if anyone finds anything out there, please let me know. P.S. If anyone has a suitable replacement for Leonzos Garlic Sticks in Gloversville, I’d like that heads up too.

I worked at Brownie’s but I was a waitress and did not have access to the recipes in the kitchen. Maybe someone can get the recipe from Ray’s brother Robert Krzys? I do not know him well enough to inquire. I do know that Mrs. Krzys would not give the original recipe out to anyone when Brownie’s was purchased a while back. I only knew two people who worked kitchen and that is Keith and Bonnie, unfortunately I do not know last names. Since I am not in Amsterdam any longer, I would love to have the recipe myself! When someone gets it, please post it or send it off to all 5 of us! Thank you much!

Looking for Brownie’s meat sauce recipe. My boyfriend is craving it and has been hounding me to try and find it. He is also craving one of their mexicans. Any idea on the recipe for that? Brownie recenlty re-opened with new owners. Same name….definately NOT the same food. Undercooked fries, canned gravey (complete w/hair…yum!) and the meat sauce….where should I start??hmmmm…..doesn’t meat sauce contain….I don’t know…..MEAT? Bad expericnce.

Gregg rumors are that Brownies reopened a short time ago with a mother and daughter team. A friend went there last week and said that the dogs and meatsauce are back as well as the fries and gravey. I moved from away from Amsterdam in 1981 and over my 27 years of relocations over the US, I have still not found any meat sauce that compares. I know quite a few people who have it, but nobody will share it in it’s entirety, just parts of it. I went to brownies for my entire life and remember in 76 when the original brownies burnt down. From what I can gather, he ground up the old hot dogs and added seasoning to it. To me the best part of it is that it wasn’t greasy at all. I would also love to have the receipe for the gravy he had on those fries!!

You may be the angel I have been searching for.
I consider myself a hot dog freak and remember the old Brownie’s hot dogs as the best. I worked for the guy who bought it after the Kryz’s sold it and remember him making it but never thought to really pay attention to what went in it. Although, I do remember using the old hot dogs.
I would love to have it so I can make it out here in St. Louis. THanks for taking the time.

They have reopened the place under the old name but they are DEFINATELY NOT using any of the old recipes. It is really bad! We stopped there the other day on the way up to the Ozoner Drive-in for their Scare-a-thon and order a few hotdogs with the sauce, french fries w/gravy and let me tell you…..the gravy was from a can, the fries where not even cooked all the way and the meat sauce…..well lets just say that I always thought meat sauce had, well, MEAT in it. Terrible experience! Rude staff too!

I am a Fultonville native. My father (Henry) to me to Brownies several times as a kid. Have been looking for that “taste” in a Hot Dog Sauce for years.

Brownie’s sauce was very close to the Wagon Wheels in Fonda, and Zentz’s lunch in Fultonville.

Hey Sharon,
Here’s the Brownie’s recipe that listed down among the posts.
Brownies Hot Dog Sauce.
3 lbs. Hot Dogs (Ground up)
2 tbls. Pickling spice
1 tbl. plus 1 tsp. of mustard seed.
2 fl oz. of gravy master (the small bottle)
2 tsp. garlic powder
Add enough water until everything floats.
Boil – then reduce to a slow boil, stirring occasionally until just a little juice is left.
So how about sharing the M&M recipe????

I left Amsterdam in 1982 and at that time it was known by some that the meat component of Brownie’s dog sauce was yesterdays or otherwise older cooked dogs that didn’t sell.

Brownies Hot Dog Sauce.
3 lbs. Hot Dogs (Ground up)
2 tbls. Pickling spice
1 tbl. plus 1 tsp. of mustard seed.
2 fl oz. of gravy master (the small bottle)
2 tsp. garlic powder
Add enough water until everything floats.
Boil – then reduce to a slow boil, stirring occasionally until just a little juice is left.

Thank you for sharing your Brownies recipe. If you ever get the M &M’s recipe or this NY recipe I have been seeing posted I would love to have those as well. I am a military spouse now but I grew up in Elmira and long for the taste of M&M Red Hots. Some of my fondest childhood memories are going there with my parents which I have since lost .

I would appreciate any M/S recipes ( don’t tell my Dr. ). I used to have one from a place in Glens Falls that was excellent and will try to retrieve it to share. I am also big fan of Gus’ in Waterford, superb Greek style sauce, still in business, and quit ethe little place !!!

Greg thanks for that post on Brownies sauce.
I heard from my dad over the years and eager to try.
In fact going to him soon in new york and would be a surpise to make for him.
I see other folks were looking for Broadway lunch in schenectady recipe which I have come across on the net at one point and in my stack of recipes to try.
My ultimate goal is to find something like Mikes hot dogs in Schenectady …. Just cannot put my finger on the one spice …. I often wonder if its something wacky like cigar ashes that are common in chili based sauces. I also hear there is some dog place in “little italy” in schenectady near Union college (my alta mater ) ….. They say its good but not as good as mikes.
(there marrotas across the street for steak sandwinches … still there ?)
Here in las vegas can’t get any good hot dogs and new york pizza is hard to find as well .
PS: Not to be rude, but my dad said there was always rumor that brownie put canine dog meat in the sauce that made it so good …. We went looking for the place in amsterdam when i was a boy, but the place was long closed and this was back in the 60’s, although i saw posts from someone saying there was a brown ies elsewhere in the 70’s .
Othe memorables:
Soul food place in schenactady on upper broadway (bad section of town)
Place in downtown troy, that not sure if still there
; Jacks in scotia “indian” burgers with coleslaw ….
They shouted “indian” for every twenty dollars woth of food. I heard the old man sold out years ago and moved to florida. Have not been there in years.
Will post broadway lunch version if can find too…

check out emylou’s at the old tulios behind the post office by the creek . they have mexican hots and if you tried one you would swear you were back in brownies at 4 am after a long night on the town , the french fries and gravy are good and the meat sauce isn’t to far off either , brownies was the place back in the day . some else has just re=opened the place and i see the brownies names is back up ….i do remember ray used to grind up the left over hotdogs into the meatsauce but never payed to much attention to his it . anyway if your in amsterdam check out the mexican hots at emylou’s i swear they’re the same as rays
